Ingredients
(Serves 4)
1 lb (450g) large shrimp, peeled and deveined
2 tablespoons olive oil (or any vegetable oil)
4 garlic cloves, minced
1 tablespoon ginger, finely grated
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 zucchini, sliced into half moons
1 cup broccoli florets
2 tablespoons soy sauce (or tamari for gluten-free)
2 tablespoons honey (or maple syrup for a vegan option)
Juice and zest of 1 lemon
1/2 teaspoon red pepper flakes (optional, for a bit of spice)
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Sesame seeds (for garnish)
Instructions:
Prepare the Shrimp
If your shrimps are frozen, thaw them under cold running water. Pat dry with paper towels to remove any excess moisture. Season with a pinch of salt and pepper.
Make the Lemon Garlic Sauce
In a small bowl, whisk together the soy sauce, honey, lemon juice, lemon zest, and red pepper flakes (if using). Set aside.
Sauté the Garlic and Ginger
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger. Stir for about 30 seconds until fragrant but not burnt.
Cook the Shrimp
Push the garlic and ginger to one side of the skillet, then add the shrimp. Sauté for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
Stir-Fry the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers, zucchini, and broccoli. Stir-fry for about 5 minutes, or until the vegetables are tender yet still crisp.
Combine Shrimp and Vegetables
Return the cooked shrimp to the skillet. Pour the lemon garlic sauce over everything, tossing to coat the shrimp and veggies evenly. Stir-fry for another 1-2 minutes, allowing the sauce to slightly thicken and coat the ingredients.
Final Touches
Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired. Garnish with freshly chopped parsley and a sprinkle of sesame seeds.
