1 lb (450g) large shrimp, peeled and deveined

2 tablespoons olive oil (or any vegetable oil)

4 garlic cloves, minced

1 tablespoon ginger, finely grated

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 zucchini, sliced into half moons

1 cup broccoli florets

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons honey (or maple syrup for a vegan option)

Juice and zest of 1 lemon

1/2 teaspoon red pepper flakes (optional, for a bit of spice)

Salt and black pepper to taste

Instructions:

Prepare the Shrimp 

If your shrimps are frozen, thaw them under cold running water. Pat dry with paper towels to remove any excess moisture. Season with a pinch of salt and pepper.

Make the Lemon Garlic Sauce

In a small bowl, whisk together the soy sauce, honey, lemon juice, lemon zest, and red pepper flakes (if using). Set aside.

Sauté the Garlic and Ginger

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger. Stir for about 30 seconds until fragrant but not burnt.

Cook the Shrimp
